Warm Sweet Potato, Mushroom & Spinach Salad

Ingredients

  • 1 lg. sweet potato
  • 12 mushrooms
  • 2 bowls of spinach (wilted)
  • 2 Jalapeno peppers
  • 1 doz. Cherry Tomatoes
  • Apple Cider Vinegar
  • Cinnamon
  • Paprika
  • Salt
  • Olive Oil

Instructions

  1. Preheat oven to 375 degrees
  2. Cut sweet potatoes into bite size chunks and place on a baking tray
  3. Drizzle with Olive oil, salt, paprika & cinnamon
  4. Bake for 15-20 minutes or until soft
  5. In the meantime, slice the mushrooms and stir fry with olive oil, salt, 2 tap of apple cider vinegar and chopped jalapeños
  6. This should take about 7 minutes; right at the end add the spinach and allow to wilt. This happens really quick
  7. Slice Cherry tomatoes
  8. Once everything is cooked is cooked mix in tomatoes and serve
